Heathers - the movie

Did you ever see this movie? It came out in 1988. I love 80's music, but the clothes (eww shoulder pads) and the hair were atrocious! Makes me laugh.
Hubby and I watched Heather's last night. If you have never seen the movie, you should rent it. Its really weird and crazy, but its kinda funny too. Just be warned, there are a lot of F bombs in the movie, among other choice words.

It made me remember how much high school can stink and how mean teenagers can be. Whenever I watch something about high school kids I cant help but wonder what type of person my kids will become? I was the quiet shy type, into drama and choir. I only had a small crowd of friends.
I could definitely see my daughter as a cheerleader, or in drama like me. She is already a drama queen. My son, I'm not sure yet, I know daddy would love to see him on the Football team or something. And if they get involved in sports, etc. then they are forced to keep their grades up. So that's a positive, not to mention extra curricular activities are good experiences anyway. Not to mention a plus for the college applications...

Miracle Diapers

I use cloth diapers and recently I learned about this wonderful cause (this information is directly from the web site):

"Miracle Diapers have been sent all over the world. Most of our applicants are from the US and Canada, but we welcome applications from anywhere. We have joyfully sent diapers to Latvia, Germany, Japan, Australia, and India, to name a few".
I think this is a wonderful cause, I definitely plan to donate my cloth diapers once Little Man is done with them.

Were Reenlisting

It is official, Hubby is Reenlisting, not only that, he will be retiring in the Marine Corp. He has been in for 7 years now and will be reenlisting for another 4. It would be silly to stop there, after another 4 years in it only makes since to go the distance to 20 and be able to retire.

That said, that main thing on my mind these days is where are they going to send us. It will be one of three options:
1. Hawaii (Exiting I know!!!!!)
2. Camp Pendleton in CA
3. Camp Lejeune in NC

All three have pros and cons to them and we will be happy wherever we end up. The only question is, where and when?
Now I get to play the waiting game... I Hate the Waiting Game.

Wordless Wednesday - Me....

Yes, I finally put a picture of myself on my blog... The majority of bloggers do it and I have always been hesitant to do so. But here it is. One of the problems has always been that I don't have pictures of just me (that I like). But hubby and I went out for date night recently and he took a picture of me! I don't look like that on a regular basis. Hair is usually up and I hardly ever wear makeup.

Hubby Loves Chicken Enchiladas!

Easy Chicken Enchiladas

2 cans (5 oz each) premium chunk white chicken, drained
1 1/2 cups shredded cheddar cheese (6 oz)
1 can (4 oz) chopped green chilies, drained
1 small onion chopped (about 1/4 cup) - I never use onion
1 can (10 oz) enchilada sauce
8 corn tortillas (6 inches each)

Optional:
shredded lettuce
sour cream
diced tomatoes

In medium bowl, combine chicken, 1 cup cheese, chilies and onion.

In bottom of 3-quart casserole dish, spread 1/2 can enchilada sauce; set aside.

To assemble enchiladas: On each tortilla, spread about 1/3 cup chicken mixture. Roll up each tortilla, jelly-roll fashion. Place seam-side down in sauce in baking dish.

Pour remaining 1/2 can enchilada sauce over enchiladas. Sprinkle with remaining 1/2 cup cheese. Cover; bake at 350 for 25 minutes or until hot.
Optional: Top with lettuce, sour cream and tomatoes.

What's for dinner? Extra-Easy Lasagna!

Extra-Easy Lasagna
3/4 pound ground beef
3 cups Traditional Spaghetti sauce
6 uncooked lasagna noodles
1 container (15 ounces) ricotta cheese (about 2 cups)
2 cups shredded mozzarella cheese (8 ounces)
1/4 cup water

In 10-inch skillet cook beef until done, I chop it up as small as I can get it. Drain fat, of course. Add spaghetti sauce heat through, stirring occasionally.

In 2-quart casserole dish:
- spread 1 1/2 cups meat mixture.
- Top with three uncooked lasagna noodles (my casserole dish is about 2 inches longer than the length of the noodles, so I put the 3 noodles all the way to one side and break another noodle and lay it at the other end going the opposite direction. Hope that makes since.)
- half of the ricotta cheese and
- half of the mozzarella cheese
Repeat layers. Top with remaining meat mixture. Slowly pour water around inside edges of baking dish. Cover tightly with foil.

Bake at 375 for 45 minutes. Uncover; bake 10 minutes more.
Let stand 10 minutes before serving.

Don't forget the garlic bread! Yum!

When life gives you an apple, what do you do with it?

I had an epiphany today.
I am not a very religious person. I do believe in God. I do not attend Church, I used to.

I have always believed that things happen for a reason. That everyone in your life is there for a reason. Weather you are meant to learn from them or vice-versa. Or just help each other along through life.

While on the computer today I stumbled across a family picture of an old boyfriend with his wife and child. For whatever reason I had a great epiphany regarding that relationship.
It lasted 2 years during high school. I realized today that had it not been for that relationship, and others that went along with it, my life would have gone down a very different path.

Before I met him I was following in the wrong foot steps. Meeting him caused me to change the way I looked at life and change what I had been doing with my life. It was a change I needed. And despite the heartbreak I felt when it ended I now know it was all meant to happen. I was put on a better path and its one of the many experiences that molded me into who I am today.

When life gives you an apple, what do you do with it?
I know the actual saying is "when life gives you lemons" but that didn't fit my situation, because it was not a lemon (sour). It was a changing point, apples can be several colors, and each color tastes different.

I showed my husband the picture of the guy and he began pointing out his flaws and said the guy was a dork. LOL, Men.

CHICKEN PARMESAN ALFREDO

CHICKEN PARMESAN ALFREDO

4 boneless, skinless chicken breast halves (about 1-1/4 lbs.)
1 egg, beaten
3/4 cup Italian seasoned dry bread crumbs
1/4 tsp. paprika (optional)
1 jar (1 lb.) Ragu® Cheesy! Classic Alfredo Sauce
1/2 cup shredded mozzarella cheese (about 2 oz.)
1 medium tomato, chopped (I prefer to use canned diced tomatoes with basil and oregano, ads a little extra flavor)

Preheat oven to 400°.
Dip chicken in egg, then bread crumbs combined with paprika, coating well.
Place chicken in baking dish. Bake uncovered 20 minutes.
Pour 1 cup Alfredo Sauce over chicken; top with cheese, then tomato. Bake an additional 10 minutes or until chicken is thoroughly cooked. Serve with remaining Sauce, heated, and sprinkle, if desired, with grated Parmesan cheese.

We had this for dinner last night with fettuccini and garlic bread, VERY GOOD, its one of my favorites!! I had to share the recipe!

Fuzzy eats off of a plate. She used to eat too fast and would get sick. So I now put her food on a plate. The food is spread out on the plate so she wont eat it too fast. - Look at her big belly hanging down. She likes her food.

Sick Kids....

Ugh, Princess is still fighting her cough. Yesterday and today her right eye is now bloodshot and irritated...
Saturday, Little Man started coughing, then developed a runny nose to go along with it. I took him to the Dr. today (which he hated, he does not like Doctors) and he has been put on an inhaler. Which he also does not like. Poor baby. I hope he gets better soon!

!WHERE HAVE I BEEN??!

I know, I have been MIA and neglecting my blog. I have several good reasons for doing so.
1. Hubby has been home on leave, he wants attention
2. Hubby likes to monopolize the computer
3. Princess was home sick the last two days
4. Major Changes in the works have caused lots of discussions between hubby and I

What are they you ask? Its still weird to use the word and contemplate that its happening.

Reenlistment.....

Not so long ago that was not an option for us. But due to the fact that he is being sent away AGAIN. Weather we like it or not. It has become an option.
Either we Reenlist and have two 6 months deployments over the next 4 years.
Or, we don't reenlist and Hubby is sent to another country for 12 months in August.
The last deployment was supposed to be his last, then he was getting out of the Military. Well, things changed and now he is leaving again weather I like it or not. So, I figure why not make the most of it and make things work for us just a little. I would rather have two 6 months deployments than one LONG 12 month deployment.
Everything is still in the works and it all lies in the hands of one man and where he wants to send us for our next duty station....
I HATE THE WAITING GAME.

Little Man Gives Kisses!

Recently Little Man learned how to give kisses. He has known how to blow kisses for a while now and now he will give kisses too, and Hugs! He's so cute!!
One day I said to Little Man "give me a kiss", and he put his hand to his mouth and made a kiss sound. Which surprised me, because he had never done that before. But I don't think I had ever asked for a kiss from him before.
Then the next day I was getting ready to leave to go to the store and I said to Hubby, "give me a kiss" so he did. Then I said the same to Little Man and he puckered up his little lips to give me a kiss! It was so cute!!!
There usually wet kisses, but I don't mind. Its so cute when he puckers up his little lips!
He is such a sweet little boy and he is getting so big. I cant believe he will be 2 in May!

It's moments like that, that make being a Mom, Priceless, the best job in the world.
Some days the hardest job, but it always has the greatest rewards.

Valentine’s Day Gifts

What do you get your honey for Valentine’s Day? Roses? Chocolates?
Do you go for practical or romantic? Something they need, or something they want? I have thought about getting Hubby a watch this year. A nice watch, not one he will wear to work and get all messed up. I was looking at the web site casio watches and browsing through the selection, looking for something that fits him.
I picked this one for him, it’s a Seiko SNZE55:
It looks cool, it has the day/date function that he likes. Also the description says water resistant and scratch resistant, which is a “must have” for my husband.

I picked this one for me, it’s a Movado 0605607:

I go for looks when it comes to watches and this one is pretty. Who doesn't love diamond accents right! The blue is a nice touch as well, I like a little color.
